Now that the cooler weather is settling in down here in Florida, I get to make some of my favorite recipes and Crock Pot Chicken Chili is one of them.
Like all my favorite recipes, this one has simple ingredients and is easy to prepare... simply combine all the ingredients in the crock pot and stir. Then add three boneless, skinless chicken breasts on top.
Then set it to cook for 8 hours and forget about it...(that is, until you start to smell it and and your mouth starts watering and everyone in the house starts asking "when will it be dinnertime!?")
When time is up, remove the chicken and shred with forks...then return it to the crock pot for a few more minutes.
That's it! Couldn't be easier or yummier...especially topped with fresh grated cheddar cheese, broken tortilla chips, and cilantro, (you can also use sour cream or avacados or lime) whatever you like!
Besides being easy and yummy, Crock Pot Chicken Chili is a low-fat, and high fiber meal!
